The Fully Loaded! I love love love this Brekky idea. It is a play on the classic Egg and Bacon Sandwich, but with a twist. In Australia we have an easy breakfast called "Toad In the Hole" it is a simple childhood classic for most Aussies growing up , that is quick and simple. The Toad In The Hole is is a hollowed out slice of bread with 2 eggs cracked into the centre and pan fried. Replacing one slice of bread in this sandwich with this gives the Fully Loaded a moist yet crunchy texture that is super delicious.
Ingredients
Fully Loaded Brekky Sandwich
- 2 Hash Browns
- 1 TBS Olive Oil
- 1 TSP Unsalted Butter
- 4 Bacon Strips
- 4 slices Bread
- 4 Eggs
- Cheddar Cheese, any cheese you like
- Pinch Salt
Instructions
Fully Loaded Breakfast Sandwich

COOK HASH BROWNS–
Start cooking Hash Browns in hot Air Fryer or Oven.
PRE HEAT PANS–
Place the Griddle & Frypan on stovetop and turn to medium heat. Whilst pans are getting hot start preparing the ingredient’s.
HOLLOW OUT BREAD-
Hollow out the centres of 2 slices of Bread (NOTE)(PICTURED). Set aside.
FRY BACON-
Add Bacon to Griddle and then Oil & Butter to Frypan.
TOAST ONE SIDE OF BREAD-
Once Butter has completely melted, place the 2 slices of Bread face down in pan and fry until slightly golden on one side.
ADD EGG TO BREAD–
Flip bread upside down revealing golden side and then crack 2 Eggs into the centre of each slice. Close the lid and turn heat to low.
FINISH BACON-
Continue cooking Bacon until golden and crisp. set aside and keep heat on.
TOAST OTHER BREAD-
Place 2 remaining Bread slices onto Griddle to toast in Bacon fat.
MELT CHEESE ON TOP-
When one side is toasted flip and add cheese. Cook until fully toasted and cheese is melted.
FINISH EGGS-
Check your Eggs and Bread and once cooked to your liking, take off heat. (NOTE)
FINISH HASH BROWNS-
Remove Hash Browns from Air Fryer/Oven once golden brown.
ASSEMBLE SANDWICH-
I like to do it in this order- Egg Bread, Bacon, Hash Brown.

Notes
HOLLOW OUT BREAD-
Make sure that the hole in the centre of your bread can fit the 2 eggs. In this recipe I like to use a larger size slice of bread. This just helps prevent the eggs from over flowing into pan or not cooking all the way through. If you just have a standard size sliced bread just use 1 egg or still use 2 eggs and flip the egg bread when cooking to ensure both sides are cooked and you don’t get stuck with gooey whites.
FINISH EGGS-
Keep that Fry Pan on low-medium heat with lid closed. This will be a really important step because it slowly steams the egg and toasts the bread. If you turn heat up to fast and don’t have lid on, The bottom side of Bread will toast to fast and the egg wont cook through.
