Beetroot & Zucchini Fritters

These simple Beetroot & Zucchini Fritters are such a great way to get colour on the table. This recipe is so simple and is a full proof formula for Fritters. No more gluey mushy mess because of a watery batter. These are crispy on the outside and creamy on the inside. Ingredients

Fritters

  • 1 GRATED Zucchini
  • 1 GRATED Peeled Raw Beetroot
  • 1/2 FINELY DICED Onion
  • 1/4 CUP Grated Parmesan Cheese
  • 1 Egg
  • 1/2 CUP Flour
  • 1 TSP Baking Powder
  • PINCH Salt & Pepper
  • 4 TBS Olive Oil, FOR FRYING

    Cheese & Onion-

    Finely dice the Onion and grate the Parmesan.

    Zucchini & Beetroot-

    In a seperate bowl use a Box Grater or Food Processor to grate Zucchini and Beetroot. Set aside with a Pinch of Salt on top. Leave for 10 minutes. (NOTE)

    Batter-

    In a large bowl add dry ingredients and mix together.

    Squeeze-

    Once 10 minutes is complete grab the Zucchini and Beetroot with hands and squeeze out the excess water. Keep Liquid for Spiced Yoghurt.

    Mix-

    Add Egg into Zucchini and Beetroot. Then add it all into the dry ingredients and mix until thick batter has formed.

    Cook-

    Heat Oil in a non-stick Frying Pan and drop about a 1/4 cup (Ice Cream scoop is about right) of batter in and flatten slightly using a spoon (1 cm thick). Fry in batches until dark golden brown on each side. (NOTE) Once Fritters are cooked place them on kitchen towel to drain off excess oil and keep them crispy.

Notes

Zucchini & Beetroot-

Don’t be tempted to skip the salt and squeeze steps in instructions. This is the crucial part that ensures your Fritters will hold their shape when cooking. Nothing worst then a batter that just turns into a mushy mess when frying.

Cook-

Fritters are infamous for being deceptive when cooking. Often we think they are done when the outside reaches a light golden brown. Only to be disappointed when we realise the inside is mushy and un cooked. To prevent this from happening aim for the outside of the fritters to be a dark golden brown. Don’t be afraid to cook them past the pale gold stage.
