Chinese Fried Rice

This Chinese Fried Rice is packed full of delicious flavour. Veggies, Pork and authentic Chinese seasonings make this a non comparable to your local takeaway. It is so quick and easy to make and is my go to when i need to use up those leftover bits of cooked rice and veggies in the fridge.
Ingredients
- 2 Tablespoons Vegetable Oil, or any flavourless oil
- 1 White Onion, Diced
- 3 Garlic Cloves, Minced
- 2 Chinese Pork Sausage , Sliced
- 1 Peeled Carrot, Diced
- 3 Mushrooms, Sliced
- Handful Wombok Cabbage, Chopped
- 3 Cups Cooked Refrigerated Rice, Basmati
- Handful Frozen Peas
- 1 Teaspoon Chinese Five Spice
- 3 Tablespoons Light Soy Sauce
- 2 Tablespoons Oyster Sauce
- 2 Tablespoons Chinese Cooking Wine, or Mirin
- 3 Eggs
- 1 Teaspoon Sesame Oil
Instructions

Heat-
Place a large Wok or Frying Pan on high heat. Add Vegetable Oil.
Aromatics-
Add Garlic, Onion and Chinese Sausage/Diced Bacon. Fry until Onion is translucent- NOTE
Vegetables-
Add Carrot, Cabbage and Mushroom, fry until Carrot has softened and Cabbage has wilted. Add Frozen Peas.-NOTE
Season & Sauce-
Add Soy, Oyster Sauce, Chinese Five Spice, Chinese Cooking Wine and Pepper.
Rice-
Add Rice and mixed together until sauces have reduced and soaked into Rice and Veggies. Push to side of pan, so one half is empty.
Eggs-
Crack the Eggs into the empty side of pan, whisk with fork and drizzle with Sesame Oil. Cook until set (like an Omelette) and then mix through Rice.
Taste-
Taste test and adjust seasonings if desired.
Enjoy!
You can store this in the fridge for up to 4 days. It reheats really well!.

Notes
Aromatics-
In this recipe i used Chinese Sausage, which you can find at any big supermarket or asian grocer. Typically Fried Rice is made with diced bacon but i wanted to change it up a little bit this time. I want to also mention that you can use what ever protein you like. I have done this recipe before with left over shredded roast chicken and it was yum! Like many of my recipes I encourage you to work with what you have, so you can discover new flavour combos and keep cooking low stress 🙂
Vegetables-
I have used fresh veggies in this recipe but Frozen Vegetables are fantastic in Fried Rice too. If you cant be bothered chopping and prepping veggies, Those assorted packs with Carrots, Peas and Corn are so convenient and easy. If you’re using Frozen Veggies, don’t bother thawing them. Add those babies straight in as is! Just keep the pan hot to ensure things don’t get to soggy.
Eggs-
If you’re a little confused with this part, I have included a picture below. It super simple, just like making an Omelette. Crack, whisk and cook until the top has slightly set and then mix it all together.
