The boss of all the Mousses- The Peanut Banoffee Mousse. This dessert is so so super easy. It really requires minimal effort- which is perfect in my books when i'm craving a sweet treat. The Mousse itself is Keto friendly as it only contains Peanut Butter, Cream Cheese, Honey and Heavy Cream. The flavours are rich but balanced well with sweet and savoury. I like this Mousse topped with fresh banana and crunchy peanuts, its a bit of a game changer if i do say so myself. I hope you love it!
Ingredients
Keto Peanut Banoffee Mousse
- 1 CUP Peanut Butter (smooth), sugar free peanut butter
- 1/2 CUP Monk free Sweetner (Powdered sugar), PICTURED
- 1 CUP Cream Cheese
- 1 CUP Heavy Cream
- 1 TSP Runny Honey, OPTIONAL
- 1 sliced Banana
- Handful chopped Peanuts

The base-
Add Peanut Butter, Cream cheese, Powdered Sweetener and Honey into a large bowl. Mix together using a Stand Mixer or Wooden Spoon until a creamy paste forms.
Whip Cream-
Add Cream into seperate bowl and whisk until stiff peaks form.
Mix together–
Add a quarter part of Whipped Cream into peanut mixture, Fold through gently using a wooden spoon. Once first part of cream is mixed in, continue to add the rest and fold through. Try and keep the mixture light and airy by not mixing to roughly.
Time to set-
Transfer the mousse into whatever you would like to serve it in. Cover with Cling Wrap and place in Refrigerator for 1 hour.
Eat-
Remove from fridge and enjoy straight away. I like to let mine slightly come to room temperature so it is softer and melts a little around edges.
