Omg, I think I have created the perfect Banana Bread recipe! Excuse my boasting but this one is a stand out for sure. I use 4 Large ripened Bananas in this recipe, so this really gives the bread that strong banana flavour. The addition of Walnuts and Brown sugar also really keeps the flavour of this bread, balanced. Not leaving you confused thinking you’re just eating sweet cake. I have had Banana Bread before and it often is to salty, sweet and dense. This one is light but also so satisfying so you can enjoy it for a light snack to get you through those cravings mid day. Disclaimer before you make this Bread. It is so addictive that you might not be able to stop eating it! Great news is that my recipe has half the amount of oil and sugar that most have on the internet. Enjoy!
Ingredients
- Baking Paper
- 4 Large Ripened Bananas, Mashed
- 2 Eggs
- 1 Teaspoon Vanilla Bean Extract
- 1 1/2 Teaspoon Ground Cinnamon
- 1/2 Cup Brown Sugar
- 2 1/2 Cups Plain Flour
- 1 Teaspoon Baking Powder
- Handful Walnuts
- 1/4 Cup Vegetable Oil
- 1/4 Cup Unsalted Butter

Wet Ingredients

Preheat & Prepare-
Preheat Oven to 180c/350f. Spray a loaf pan with oil (I use Coconut Oil) and line with Baking Paper. The oil will help the baking paper sit in place. Set aside.
Mash Banana-
In a large mixing bowl break up 4 Ripened Bananas, Mash until completely broken down. Mixture will be lumpy and thats fine 🙂
Wet Ingredients-
Add the Eggs, Vanilla, Melted Butter and Oil. Mix together.
Dry Ingredients

Dry Ingredients-
Add Cinnamon, Brown Sugar and Baking Powder, mix together.
Flour-
Add one cup of Flour and mix in then add the second cup and mix again. Mixture will be thick and lumpy.
Bake-
Pour batter into prepared loaf pan then stipple Walnuts on top, pressing them into wet batter. Bake on middle shelf in oven for 45-60 minutes. I like to check at the 30 minute mark but it almost always needs longer.- NOTE
Enjoy!-
You can eat this bread straight out of oven. I recommend letting it rest and come to room temp then toasting it and serving it with Butter on top. Absolutely amazing!

Notes
Bake-
Easy way to test if bread is ready is by poking in a metal skewer. When it comes out clean with no wet batter on it, the bread is ready.
